Description
One-Pan Honey BBQ Chicken Rice is a weeknight comfort meal where juicy chicken bakes over fluffy rice, caramelizing honey BBQ sauce on top, all in one pan.

- 1½ lbs boneless, skinless chicken thighs or breasts
- 1 tbsp olive oil
- 1 cup uncooked long-grain white rice
- 2¼ cups chicken broth
- ¾ cup honey BBQ sauce
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- ½ cup frozen corn (optional)
- 2 tbsp chopped parsley or green onions (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Spread uncooked rice evenly across the bottom of the dish.
- Pour chicken broth over the rice and stir in olive oil, paprika, garlic powder, onion powder, salt, and black pepper.
- Place chicken on top of the rice in a single layer.
- Brush or spoon honey BBQ sauce generously over each piece of chicken.
- Sprinkle corn around the chicken if using.
- Cover tightly with foil and bake for 30–35 minutes, or until rice is tender and chicken is cooked through.
- Remove foil and bake uncovered for 5–10 minutes to slightly caramelize the sauce.
- Let rest for 5 minutes, garnish if desired, and serve warm.
Notes
- You can use chicken thighs or breasts; thighs stay juicier while breasts cook quickly. Adjust cooking time as needed.
- To keep this dish gluten-free, ensure your honey BBQ sauce is certified gluten-free.
- For extra color, finish under the broiler for 1-2 minutes after caramelizing the sauce.
- Leftovers can be stored in the refrigerator for up to 3 days.
