Description

One-Pan Honey BBQ Chicken Rice is a weeknight comfort meal where juicy chicken bakes over fluffy rice, caramelizing honey BBQ sauce on top, all in one pan.


Ingredients

  • lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 cup uncooked long-grain white rice
  • 2¼ cups chicken broth
  • ¾ cup honey BBQ sauce
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup frozen corn (optional)
  • 2 tbsp chopped parsley or green onions (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Spread uncooked rice evenly across the bottom of the dish.
  3. Pour chicken broth over the rice and stir in olive oil, paprika, garlic powder, onion powder, salt, and black pepper.
  4. Place chicken on top of the rice in a single layer.
  5. Brush or spoon honey BBQ sauce generously over each piece of chicken.
  6. Sprinkle corn around the chicken if using.
  7. Cover tightly with foil and bake for 30–35 minutes, or until rice is tender and chicken is cooked through.
  8. Remove foil and bake uncovered for 5–10 minutes to slightly caramelize the sauce.
  9. Let rest for 5 minutes, garnish if desired, and serve warm.

Notes

  • You can use chicken thighs or breasts; thighs stay juicier while breasts cook quickly. Adjust cooking time as needed.
  • To keep this dish gluten-free, ensure your honey BBQ sauce is certified gluten-free.
  • For extra color, finish under the broiler for 1-2 minutes after caramelizing the sauce.
