One-Pan Cowboy Butter Tortellini Steak Bites: a bold, buttery skillet dinner featuring seared sirloin bites and cheese tortellini in a punchy cowboy butter sauce.

- 1 lb sirloin steak, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp crushed red pepper flakes (optional)
- 1 tsp dried parsley
- 1 tsp dried thyme
- 1 tbsp fresh lemon juice
- ¼ cup beef broth
- 1 (20 oz) package refrigerated cheese tortellini
- ½ cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Cook tortellini according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Season steak bites with salt, black pepper, and paprika.
- Sear steak for 2–3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
- Reduce heat to medium and add butter to the skillet.
- Stir in garlic, red pepper flakes, parsley, and thyme. Cook for 30 seconds until fragrant.
- Add lemon juice and beef broth, scraping up browned bits from the pan.
- Return steak to the skillet along with cooked tortellini. Toss to coat in the cowboy butter sauce.
- Sprinkle Parmesan cheese over the top and stir gently until melted and combined.
- Garnish if desired and serve warm.
Notes
- For extra heat, leave in the crushed red pepper flakes or add a dash of hot sauce.
- Serve with extra Parmesan or chopped parsley for garnish.
