Description

One-Pan Cheesy Meat & Potato Skillet is a bold, fast, and tasty weeknight dinner featuring savory ground beef, potatoes, and gooey cheese.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 3 medium russet potatoes, diced small
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried thyme
  • ½ cup beef broth
  • 1½ cups shredded cheddar cheese
  • 2 tbsp chopped parsley or green onions (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until they begin to soften and lightly brown.
  3. Add onion and cook for 2–3 minutes until softened.
  4. Push vegetables to the side and add ground beef. Cook until browned, breaking it apart as it cooks.
  5. Stir in garlic, salt, black pepper, paprika, and thyme.
  6. Pour in beef broth, cover, and simmer for 8–10 minutes until potatoes are tender.
  7. Sprinkle shredded cheese evenly over the top.
  8. Cover and cook for 2–3 minutes until cheese is melted and bubbly.
  9. Garnish if desired and serve warm.
