- 1 lb ground beef
- 1 tbsp olive oil
- 3 medium russet potatoes, diced small
- 1 small onion, chopped
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried thyme
- ½ cup beef broth
- 1½ cups shredded cheddar cheese
- 2 tbsp chopped parsley or green onions (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until they begin to soften and lightly brown.
- Add onion and cook for 2–3 minutes until softened.
- Push vegetables to the side and add ground beef. Cook until browned, breaking it apart as it cooks.
- Stir in garlic, salt, black pepper, paprika, and thyme.
- Pour in beef broth, cover, and simmer for 8–10 minutes until potatoes are tender.
- Sprinkle shredded cheese evenly over the top.
- Cover and cook for 2–3 minutes until cheese is melted and bubbly.
- Garnish if desired and serve warm.
Notes
- Leftovers can be stored in the refrigerator for up to 3 days.
- For gluten-free, use gluten-free beef broth and check cheese labels.
- Swap parsley for chopped green onions for a milder flavor.
- For a spicier kick, add a pinch of red pepper flakes.
