One-Pan Cheesy Chicken Broccoli Pasta is creamy, comforting, and made for busy nights.
Ingredients

- 12 oz penne or rotini pasta
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1½ cups broccoli florets
- 2 cups chicken broth
- 1 cup milk
- 1 packet ranch seasoning mix
- 1½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Heat olive oil in a large deep skillet over medium heat.
- Add chicken, season with salt and black pepper, and cook for 5–6 minutes until lightly golden and cooked through.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add uncooked pasta, chicken broth, milk, ranch seasoning, and broccoli to the skillet. Stir well.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.
- Stir in cheddar and Parmesan cheese until melted and creamy.
- Simmer uncovered for 2–3 minutes if needed to thicken.
- Garnish if desired and serve warm.
Notes
- To make this gluten-free, use gluten-free pasta in place of the regular pasta.
- For a lighter version, substitute part-skim milk and reduce the cheese amounts slightly.
- Leftovers can be stored in the refrigerator for 3–4 days. Reheat gently on the stove or in the microwave.
- Stir occasionally during cooking to prevent sticking and ensure even thickening.
- For extra veggie goodness, add more broccoli or other vegetables you enjoy.
