Olivia’s Cozy Pumpkin Chili is a hearty, fall-inspired chili that blends pumpkin puree with beans and warm spices for a comforting, cozy bowl that works beautifully as a twist on traditional chili.

- 1 tbsp olive oil
- 1 lb ground turkey or beef (optional—omit for vegetarian)
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can pumpkin puree
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 cup vegetable or chicken broth
- 2 tbsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp cinnamon (optional, for a cozy flavor twist)
- Salt and pepper to taste
- Toppings: sour cream or Greek yogurt, shredded cheese, avocado, cilantro
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and bell pepper; sauté 3–4 minutes.
- Add garlic and cook 1 minute until fragrant.
- Add ground meat (if using) and cook until browned. Drain excess fat if needed.
- Stir in pumpkin puree, diced tomatoes, beans, broth, and all seasonings. Mix well.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes, stirring occasionally.
- Adjust seasoning to taste and serve warm with your favorite toppings.
Notes
- For a vegan version, omit the meat and use vegetable broth.
- Adjust spices to taste or add a pinch of cayenne for extra heat.
- Thicken the chili by simmering longer or mashing some beans against the side of the pot.
- Best served with toppings like sour cream, shredded cheese, avocado, and cilantro.
- Leftovers keep well in the fridge for up to 4 days and can be frozen for up to 3 months.
