Description

Olivia’s Cozy Pumpkin Chili is a hearty, fall-inspired chili that blends pumpkin puree with beans and warm spices for a comforting, cozy bowl that works beautifully as a twist on traditional chili.

  • 1 lb ground turkey or beef (optional—omit for vegetarian)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can pumpkin puree
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 cup vegetable or chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp cinnamon (optional, for a cozy flavor twist)
  • Salt and pepper to taste
  • Toppings: sour cream or Greek yogurt, shredded cheese, avocado, cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and bell pepper; sauté 3–4 minutes.
  2. Add garlic and cook 1 minute until fragrant.
  3. Add ground meat (if using) and cook until browned. Drain excess fat if needed.
  4. Stir in pumpkin puree, diced tomatoes, beans, broth, and all seasonings. Mix well.
  5. Bring to a boil, then reduce heat and simmer for 25–30 minutes, stirring occasionally.
  6. Adjust seasoning to taste and serve warm with your favorite toppings.
