- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups beef broth
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) white beans, rinsed and drained
- 1 cup ditalini pasta
- 1 tsp Italian seasoning
- ½ tsp dried basil
- ½ tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion, garlic, carrots, and celery. Sauté for 4–5 minutes until vegetables begin to soften.
- Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, basil, oregano, salt, and black pepper.
- Bring to a gentle boil, then reduce heat and simmer for 15 minutes.
- Add kidney beans, white beans, and pasta. Stir well.
- Simmer for another 10–12 minutes, or until the pasta is tender.
- Taste and adjust seasoning if needed.
- Garnish with parsley and serve warm.
Notes
- For a lighter version, use lean ground beef or substitute with ground turkey.
- If you prefer a gluten-free option, use gluten-free pasta. Note that pasta will cook differently; check the package instructions.
- This soup tastes even better the next day—store leftovers in the fridge for up to 3–4 days.
- To make ahead, prepare the soup without the pasta and add cooked pasta just before serving to avoid overcooking.
