No-Bake Pumpkin Pie Balls are creamy, spiced bite-sized treats that capture the essence of pumpkin pie without turning on the oven.

- ½ cup pumpkin puree
- 4 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ tsp pumpkin pie spice (or 1 tsp cinnamon + ¼ tsp nutmeg + ¼ tsp ginger)
- 1 cup white chocolate chips or almond bark (for coating, optional)
Instructions
- In a medium bowl, mix pumpkin puree, cream cheese, powdered sugar, vanilla, and pumpkin pie spice until smooth.
- Stir in graham cracker crumbs until the mixture thickens into a dough-like consistency.
- Chill in the refrigerator for 30–40 minutes until firm enough to roll.
- Roll into 1-inch balls.
- Optional: Melt white chocolate and dip each ball, then roll in graham crumbs or drizzle with extra chocolate.
- Chill for 15 minutes to set and enjoy!
Notes
- Make-ahead tip: Keep chilled in the fridge for up to 3 days.
- To keep dairy-free, use dairy-free cream cheese and graham crackers; omit coating or use dairy-free white chocolate.
- If the mixture is too soft, chill longer; if too dry, add a teaspoon of pumpkin puree or cream cheese.
