Instructions
- In a large bowl, mix pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, and vanilla until smooth.
- Stir in graham cracker crumbs until mixture forms a soft dough. Chill in the refrigerator for 30–40 minutes.
- Once firm, roll into small balls (about 1 inch in size) and place on a parchment-lined tray.
- Melt chocolate chips in a microwave-safe bowl (30-second intervals, stirring between each).
- Dip each ball into the melted chocolate using a fork, then place back on the tray.
- Sprinkle crushed graham crackers or cinnamon sugar on top for a festive finish.
- Chill for 15–20 minutes until the coating sets. Serve chilled or at room temperature.
