- 2 1/4 cups all-purpose flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 3/4 cup unsalted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1/4 cup molasses
- 1/4 cup granulated sugar (for rolling)
Instructions
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, ginger, and cloves. Set aside.
- In a large mixing bowl, cream butter and brown sugar together until light and fluffy (about 2 minutes).
- Add egg and molasses, mixing until smooth and well combined.
- Gradually stir in the dry ingredients until a soft dough forms.
- Cover and refrigerate for at least 1 hour (for best chewy texture).
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop 1 1/2 tablespoons of dough, roll into balls, and coat each one in granulated sugar.
- Place on baking sheet 2 inches apart and bake for 9–11 minutes, until tops are set and crackled.
- Cool on the pan for 5 minutes before transferring to a wire rack.
