Mint Melon Soft Cheese is a light, refreshing homemade dessert cheese infused with fresh mint and sweet melon, creating a creamy, delicate, and slightly tangy treat.

- 1 quart whole milk
- 1 cup plain yogurt (unsweetened)
- 2 tbsp lemon juice or white vinegar
- 1 tbsp finely chopped fresh mint leaves
- ½ cup finely diced ripe melon (cantaloupe or honeydew works best)
- ½ tsp salt (optional, adjust to taste)
Instructions
- Heat milk in a saucepan over medium heat until steaming, just before boiling.
- Stir in yogurt and lemon juice (or vinegar). Simmer gently until curds form and separate from the whey.
- Line a strainer with cheesecloth and pour mixture through to collect the curds. Let drain for 1–2 hours until soft cheese forms.
- Transfer curds to a bowl and gently mix in mint, melon, and salt if desired.
- Shape into a round or press lightly into a mold, then chill for at least 1 hour before serving.
- Serve with crackers, fresh fruit, or drizzle with honey for a sweet finish.
Notes
- Use ripe melon for natural sweetness; cantaloupe or honeydew both work well.
- For a firmer cheese, drain the curds longer or press them lightly in a mold.
- Drain whey completely and refrigerate; soft cheese is best served chilled.
- Optional: sprinkle a little extra mint on top before serving for a fresh aroma.
