- 1 cup butter, melted
- 2 cups sugar
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1 tsp vanilla extract
- ½ tsp salt
- For the cheesecake layer:
- 16 oz cream cheese, softened
- ¾ cup sugar
- 2 large eggs
- ½ tsp peppermint extract
- 2 tbsp all-purpose flour
- A few drops green food coloring (optional)
- For the topping:
- 1 cup heavy cream
- 1 ½ cups semi-sweet chocolate chips
- Crushed Thin Mints or mint chocolate cookies (for garnish)
Instructions
- Preheat oven to 350 F (175 C). Grease a 9×13-inch baking pan or springform pan.
- Make the brownie base: Whisk melted butter, sugar, and vanilla. Beat in eggs one at a time. Stir in flour, cocoa, and salt. Spread batter evenly in pan.
- Make the cheesecake layer: Beat cream cheese and sugar until smooth. Add eggs one at a time, then peppermint extract, flour, and food coloring if using. Spread evenly over brownie layer.
- Bake for 40–45 minutes or until cheesecake is set. Let cool completely.
- Make the topping: Heat cream until steaming, pour over chocolate chips, let sit 2 minutes, then stir smooth.
- Spread over cooled cheesecake brownie.
- Chill for at least 4 hours or overnight. Garnish with crushed Thin Mints before serving.
