Description

Meatloaf with Mashed Potatoes and Cheese is the ultimate comfort food in one dish, layering juicy meatloaf with creamy mashed potatoes and melted cheese.


Ingredients

  • 1 lb ground beef (or a mix of beef and turkey)
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup milk (for meatloaf)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce (halal substitute: soy sauce)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk (for mashed potatoes, or cream)
  • Salt and pepper, to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • Chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.
  2. In a bowl, combine ground beef, egg, breadcrumbs, milk for meatloaf, onion, garlic, ketchup, Worcestershire sauce (halal substitute: soy sauce), salt, and pepper. Mix until just combined—don’t overmix.
  3. Press the meat mixture evenly into the bottom of the baking dish. Bake for 20–25 minutes, or until cooked through.
  4. Meanwhile, boil potatoes until tender. Drain, then mash with butter, 1/4 cup milk for mashed potatoes, salt, and pepper until creamy.
  5. Spread mashed potatoes evenly over the cooked meatloaf. Top with shredded cheese.
  6. Return to oven and bake another 5–10 minutes, until cheese is melted and bubbly.
  7. Garnish with parsley and serve warm.

Notes

  • Halal substitute: use soy sauce instead of Worcestershire sauce if needed
  • You can use a mix of beef and turkey for a lighter version
  • Let the meatloaf rest for 5 minutes before slicing for cleaner portions
