Description
Meatloaf with Mashed Potatoes and Cheese is the ultimate comfort food in one dish, layering juicy meatloaf with creamy mashed potatoes and melted cheese.
Ingredients
Scale
- 1 lb ground beef (or a mix of beef and turkey)
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup milk (for meatloaf)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce (halal substitute: soy sauce)
- 1 tsp salt
- 1/2 tsp black pepper
- 4 medium potatoes, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk (for mashed potatoes, or cream)
- Salt and pepper, to taste
- 1 cup shredded cheddar or mozzarella cheese
- Chopped parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.
- In a bowl, combine ground beef, egg, breadcrumbs, milk for meatloaf, onion, garlic, ketchup, Worcestershire sauce (halal substitute: soy sauce), salt, and pepper. Mix until just combined—don’t overmix.
- Press the meat mixture evenly into the bottom of the baking dish. Bake for 20–25 minutes, or until cooked through.
- Meanwhile, boil potatoes until tender. Drain, then mash with butter, 1/4 cup milk for mashed potatoes, salt, and pepper until creamy.
- Spread mashed potatoes evenly over the cooked meatloaf. Top with shredded cheese.
- Return to oven and bake another 5–10 minutes, until cheese is melted and bubbly.
- Garnish with parsley and serve warm.
Notes
- Halal substitute: use soy sauce instead of Worcestershire sauce if needed
- You can use a mix of beef and turkey for a lighter version
- Let the meatloaf rest for 5 minutes before slicing for cleaner portions
- Leftovers refrigerate up to 3 days or freeze for longer
- For more cheesy flavor, add a little extra cheese on top
