Meatball and Mashed Potato: Cozy, creamy, cheesy 1-pan meal that’s perfect for weeknights.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 2 cups brown gravy
  • 3 cups prepared mashed potatoes
  • 1 1/2 cups shredded mozzarella or cheddar cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a bowl, mix ground beef, breadcrumbs, egg, salt, black pepper, and garlic powder. Form into small meatballs.
  3. Place meatballs in the baking dish and bake for 18-20 minutes until cooked through.
  4. Remove from oven and pour brown gravy evenly over the meatballs.
  5. Spread mashed potatoes evenly over the top.
  6. Sprinkle shredded cheese generously over the mashed potatoes.
  7. Bake uncovered for 15-20 minutes until cheese is melted and bubbly.
  8. Let rest 5 minutes before serving. Garnish if desired.

  • Let rest 5 minutes before serving to set the casserole.
  • Garnish with chopped parsley for color (optional).
  • Leftovers refrigerate well for up to 3 days; reheat in the oven or microwave.
