Description

Marry Me Chicken Pasta is a creamy, comforting pasta dish featuring juicy chicken simmered in a sun-dried tomato cream sauce tossed with pasta.


Ingredients

  • 1 lb chicken breast, sliced or cubed
  • 12 oz pasta (penne, rigatoni, or rotini)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 ½ cups heavy cream
  • ¾ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ¼ tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the pasta in salted water according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, paprika, and Italian seasoning. Cook until golden and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1 minute until fragrant.
  4. Pour in chicken broth and simmer for 2-3 minutes, scraping up any browned bits.
  5. Stir in heavy cream and Parmesan. Simmer until the sauce thickens slightly.
  6. Add the cooked chicken back to the skillet, then stir in the pasta until fully coated in the creamy sauce.
  7. Garnish with fresh basil or parsley and serve warm.

Notes

  • You can substitute chicken thighs for extra tenderness.
  • Use gluten-free pasta if needed; the sauce itself is naturally gluten-free.
  • For a lighter version, substitute half-and-half for some of the heavy cream or use 1 cup heavy cream and 1 cup milk.
  • Stir in a handful of spinach for extra greens if desired.
