- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp paprika
- ¼ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Pat chicken dry and season both sides with salt, pepper, Italian seasoning, and paprika.
- Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Stir in sun-dried tomatoes, chicken broth, and heavy cream, scraping up any browned bits from the pan.
- Add Parmesan cheese and red pepper flakes, stirring until the sauce becomes thick and creamy.
- Return the chicken to the skillet and coat it generously in the sauce. Simmer for 3–5 minutes to let the flavors blend.
- Garnish with fresh basil or parsley and serve over pasta, mashed potatoes, or rice.
