- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup zucchini, finely grated and drained
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 2 tbsp lemon juice
- 2 tbsp lemon zest
- 1 tsp vanilla extract
- 1/2 cup plain Greek yogurt or sour cream
- Optional glaze:
- 1 cup powdered sugar
- 2–3 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In a large bowl, whisk sugars, oil, eggs, lemon juice, zest, and vanilla until smooth. Stir in Greek yogurt.
- Fold in grated zucchini (squeeze out excess moisture first).
- Gently fold dry ingredients into wet until just combined.
- Pour batter into loaf pan and bake 50-55 minutes, until a toothpick comes out clean.
- Cool, then drizzle with lemon glaze if desired.
Notes
- Squeeze excess moisture from zucchini before folding into the batter.
- Oil can be substituted with melted coconut oil.
- Glaze is optional.
