  • ¾ cup grated Pecorino Romano cheese
  • ½ cup seasoned breadcrumbs

  • ½ tsp garlic powder
  • ½ tsp black pepper

  • 1 tsp salt (divided)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • 2 tbsp fresh lemon juice
  • ½ tsp lemon zest
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Pat chicken breasts dry and season lightly with half the salt.
  2. In a shallow bowl, mix Pecorino cheese, breadcrumbs, lemon zest, garlic powder, paprika, black pepper, and remaining salt.
  3. Press chicken into the mixture, coating both sides well.
  4. Heat olive oil and butter in a large skillet over medium heat.
  5. Add chicken and cook for 4-5 minutes per side until golden and cooked through. Remove chicken and set aside.
  6. In the same skillet, melt 1 tablespoon butter and add garlic. Cook for 30 seconds until fragrant.
  7. Pour in chicken broth, scraping up any browned bits.
  8. Stir in heavy cream, lemon juice, lemon zest, and black pepper.
  9. Simmer for 3-4 minutes until the sauce thickens slightly.
  10. Return chicken to the skillet and spoon sauce over the top.
  11. Simmer for 2 minutes, garnish if desired, and serve warm.
