- 2½ lbs bone-in, skin-on chicken thighs
- ¼ cup olive oil
- ¼ cup fresh lemon juice
- 1 tbsp lemon zest
- 5 cloves garlic, minced
- 1½ tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (205°C) and lightly grease a large baking dish.
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and black pepper.
- Place chicken thighs in the baking dish and pour marinade evenly over the chicken. Turn to coat well.
- Marinate for at least 20 minutes, or up to 24 hours in the refrigerator for deeper flavor.
- Arrange chicken skin-side up and bake uncovered for 40–45 minutes, or until the chicken is golden and cooked through.
- Optional: Broil for 2–3 minutes for extra crispy skin.
- Let rest for 5 minutes, garnish if desired, and serve warm.
