- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 tsp Italian seasoning
- 1 cup chicken broth
- ¾ cup heavy cream
- 1 tbsp lemon zest
- ¼ cup fresh lemon juice
- 1 lb shelf-stable potato gnocchi
- ½ cup grated Parmesan cheese
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Heat olive oil and butter in a large skillet or pot over medium heat.
- Add chicken and season with salt, black pepper, paprika, and Italian seasoning. Cook for 5–6 minutes until lightly golden and cooked through. Remove chicken and set aside.
- In the same pot, add garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth, scraping up any browned bits from the bottom.
- Stir in heavy cream, lemon zest, and lemon juice. Bring to a gentle simmer.
- Add gnocchi and cook for 3–4 minutes, stirring gently, until tender.
- Return chicken to the pot and stir in Parmesan cheese.
- Simmer for 2–3 minutes until the sauce thickens slightly.
- Garnish if desired and serve warm.
Notes
- This is a one-pot meal that comes together quickly for busy weeknights.
- If you prefer a thinner sauce, whisk in a splash more chicken broth or cream.
- You can use gluten-free gnocchi if needed to make this dish gluten-free.
