Description

Italian Sausage & Pepper Casserole is a bold, cozy gluten-free weeknight staple featuring savory sausage, peppers, and melted cheese.


Ingredients

  • lbs Italian beef or chicken sausage, sliced
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1½ cups marinara sauce
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sliced sausage and cook for 5–6 minutes until browned.
  4. Add bell peppers and onion, sautéing for 4–5 minutes until slightly softened.
  5. Stir in garlic and cook for 30 seconds until fragrant.
  6. Add marinara sauce, oregano, basil, salt, and black pepper. Simmer for 3–4 minutes.
  7. Transfer mixture to the prepared baking dish.
  8. Sprinkle mozzarella and Parmesan evenly over the top.
  9. Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
  10. Let rest for 5 minutes, garnish if desired, and serve warm.
