- 1½ lbs Italian beef or chicken sausage, sliced
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1½ cups marinara sauce
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp salt
- ½ tsp black pepper
- 1½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat.
- Add sliced sausage and cook for 5–6 minutes until browned.
- Add bell peppers and onion, sautéing for 4–5 minutes until slightly softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add marinara sauce, oregano, basil, salt, and black pepper. Simmer for 3–4 minutes.
- Transfer mixture to the prepared baking dish.
- Sprinkle mozzarella and Parmesan evenly over the top.
- Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
- Let rest for 5 minutes, garnish if desired, and serve warm.
