  • 1 ½ lbs boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 ½ cups tomato puree or crushed tomatoes
  • 1 cup heavy cream (or coconut cream for dairy-free option)
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp turmeric
  • ½ tsp chili powder (optional, for heat)
  • Salt and black pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat butter and olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and sear until lightly golden (about 5–7 minutes). Remove and set aside.
  2. In the same skillet, add onion, garlic, and ginger. Cook for 3–4 minutes until fragrant and softened.
  3. Stir in garam masala, cumin, paprika, turmeric, and chili powder. Toast spices for 1 minute to release their flavor.
  4. Add tomato puree and simmer for 5 minutes, stirring occasionally.
  5. Reduce heat and stir in the cream. Return chicken to the pan and simmer gently for 10–15 minutes, until sauce thickens and chicken is tender.
  6. Garnish with fresh cilantro and serve hot with naan or basmati rice.
