  • 1 tbsp grated ginger
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp turmeric
  • ½ tsp chili powder (adjust to taste)
  • 1 cup tomato puree or crushed tomatoes
  • ¾ cup heavy cream (or coconut cream for dairy-free option)
  • ½ cup plain yogurt
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a bowl, combine chicken pieces, yogurt, 1 tsp garam masala, ½ tsp cumin, and a pinch of salt. Mix well and marinate for at least 30 minutes (up to overnight for best flavor).
  2. Heat 1 tbsp butter and olive oil in a large skillet over medium heat. Cook the marinated chicken until lightly browned and cooked through. Remove and set aside.
  3. In the same pan, melt the remaining butter and sauté onion until soft and golden. Add garlic, ginger, and remaining spices, stirring for 30 seconds until fragrant.
  4. Stir in tomato puree and simmer for 5 minutes, allowing the flavors to develop.
  5. Reduce heat and add cream. Stir to create a smooth, rich sauce. Return the chicken to the pan and simmer for 10 minutes, stirring occasionally.
  6. Taste and adjust salt or spice levels as desired.
  7. Garnish with chopped cilantro and serve with warm basmati rice or naan.
