- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tbsp butter
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 1/2 tsp garam masala
- 1 tsp ground cumin
- 1 tsp chili powder (adjust to taste)
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1 cup tomato puree (or crushed tomatoes)
- 1 cup heavy cream (or coconut cream for a lighter version)
- 1 tbsp tomato paste
- 1 tsp sugar (optional, to balance acidity)
- 2 tbsp chopped cilantro (for garnish)
Instructions
- Heat butter and olive oil in a large skillet over medium heat. Add onion and sauté until golden and soft, about 5 minutes.
- Stir in garlic, ginger, and spices (garam masala, cumin, chili powder, turmeric, and salt). Cook for 30 seconds until fragrant.
- Add tomato puree and tomato paste, stirring to combine. Simmer for 5 minutes.
- Stir in heavy cream and sugar (if using). Add chicken pieces, ensuring they’re coated in the sauce.
- Simmer gently for 20-25 minutes, stirring occasionally, until chicken is tender and sauce is thick and creamy.
- Garnish with fresh cilantro and serve hot with rice or naan.
