- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4–5 medium potatoes, thinly sliced
- 1 can (10.5 oz) gluten-free cream of mushroom soup
- ½ cup milk
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1½ cups shredded cheddar cheese (divided)
- 2 tbsp chopped parsley or green onions (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
- In a bowl, whisk together cream of mushroom soup, milk, salt, black pepper, and paprika.
- Layer half of the sliced potatoes in the baking dish. Top with the cooked beef mixture and sprinkle with 1 cup of shredded cheese.
- Add remaining potatoes and pour the soup mixture evenly over the top.
- Cover tightly with foil and bake for 40 minutes, or until potatoes are tender.
- Remove foil, sprinkle remaining cheese over the top, and bake uncovered for 10–15 minutes until melted and lightly golden.
- Let rest for 5 minutes, garnish if desired, and serve warm.
Notes
- For a gluten-free version, ensure the cream of mushroom soup is gluten-free.
- If potatoes are thick, you may need a few extra minutes in the oven to tenderize.
- Leftovers refrigerate well and reheat nicely for next-day meals.
