Hobo Casserole (Ground Beef) is a simple, hearty, and irresistibly comforting one-dish meal that defines cozy home cooking. Layers of seasoned ground beef, tender potatoes, creamy soup, and melted cheese come together for a rustic, old-fashioned dish that tastes like a hug in every bite.

- 1 lb ground beef (or ground turkey for a lighter version)
- 1 medium onion, chopped
- 3–4 medium potatoes, thinly sliced
- 1 can (10.5 oz) cream of mushroom or cream of chicken soup
- ½ cup milk
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt and pepper, to taste
- 2 tbsp butter, melted
- Optional: parsley or green onions for garnish
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a skillet, cook ground beef and onion over medium heat until the meat is browned and onions are tender. Drain excess fat and season with garlic powder, onion powder, salt, and pepper.
- In a small bowl, whisk together the soup and milk until smooth.
- Layer half of the sliced potatoes in the bottom of the baking dish, then add half of the cooked ground beef. Pour half the soup mixture over the top.
- Repeat with the remaining potatoes, beef, and soup mixture.
- Cover tightly with foil and bake for 50–55 minutes, or until potatoes are tender.
- Remove foil, sprinkle shredded cheese evenly over the top, and drizzle with melted butter. Bake uncovered for another 10 minutes, until cheese is bubbly and golden.
- Let rest for 5 minutes before serving. Garnish with parsley if desired.
Notes
- To lighten the dish, use ground turkey and/or reduced-fat cheese.
- For a gluten-free option, use a gluten-free cream soup (check label) or a homemade cream soup substitute.
- If potato slices vary in thickness, rotate the dish during baking to ensure even cooking.
