Description

Hobo Casserole (Ground Beef) is a simple, hearty, and irresistibly comforting one-dish meal that defines cozy home cooking. Layers of seasoned ground beef, tender potatoes, creamy soup, and melted cheese come together for a rustic, old-fashioned dish that tastes like a hug in every bite.

  • 1 lb ground beef (or ground turkey for a lighter version)
  • 1 medium onion, chopped
  • 34 medium potatoes, thinly sliced
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • 2 tbsp butter, melted
  • Optional: parsley or green onions for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet, cook ground beef and onion over medium heat until the meat is browned and onions are tender. Drain excess fat and season with garlic powder, onion powder, salt, and pepper.
  3. In a small bowl, whisk together the soup and milk until smooth.
  4. Layer half of the sliced potatoes in the bottom of the baking dish, then add half of the cooked ground beef. Pour half the soup mixture over the top.
  5. Repeat with the remaining potatoes, beef, and soup mixture.
  6. Cover tightly with foil and bake for 50–55 minutes, or until potatoes are tender.
  7. Remove foil, sprinkle shredded cheese evenly over the top, and drizzle with melted butter. Bake uncovered for another 10 minutes, until cheese is bubbly and golden.
  8. Let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

  • To lighten the dish, use ground turkey and/or reduced-fat cheese.
  • For a gluten-free option, use a gluten-free cream soup (check label) or a homemade cream soup substitute.
  • If potato slices vary in thickness, rotate the dish during baking to ensure even cooking.
