Description

Hobo Casserole is a 5-ingredient easy, cozy, budget-friendly comfort dish featuring ground beef, potatoes, and melted cheese for a hearty weeknight dinner.


Ingredients

  • 1 small onion, finely chopped
  • 34 medium potatoes, thinly sliced
  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese
  • Salt and pepper, to taste
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 tbsp olive oil
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven: Set to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the beef: In a skillet over medium heat, add olive oil and brown the ground beef with onion until fully cooked. Drain excess grease and season with salt, pepper, garlic powder, and paprika.
  3. Mix the sauce: In a bowl, combine the cream of mushroom soup and milk until smooth.
  4. Layer the casserole: Spread half of the sliced potatoes on the bottom of the baking dish. Add half of the beef mixture, then pour half of the soup mixture over it.
  5. Repeat layers and top with shredded cheese.
  6. Bake: Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 10–15 minutes until potatoes are tender and the cheese is golden and bubbly.
  7. Serve: Let rest for 5 minutes before serving. Garnish with parsley and enjoy warm!
