- 1 cup beef broth
- 8 oz pasta (penne, rotini, or rigatoni)
- ½ cup grated Parmesan cheese
- ½ cup plain Greek yogurt or low-fat cream cheese (for extra protein)
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- Fresh parsley, for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain any excess fat.
- Add onion and garlic; sauté until softened and fragrant.
- Stir in Italian seasoning, paprika, salt, and pepper.
- Pour in milk and beef broth. Add pasta and stir well. Bring to a simmer, then cover and cook for 10–12 minutes, stirring occasionally, until pasta is tender.
- Stir in Greek yogurt and Parmesan cheese until creamy and smooth.
- Let the sauce thicken for 2–3 minutes, then garnish with parsley and serve warm.
Notes
- For extra richness, use 1 cup milk + 1 cup cream as directed.
- Stir the yogurt in off the heat to prevent curdling.
