- 1 lb ground turkey
- 3 medium potatoes, diced
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp thyme (optional)
- Salt and black pepper, to taste
- ¼ cup chicken or vegetable broth (optional, for softer potatoes)
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 8–10 minutes, stirring occasionally, until golden and tender. Remove from the pan and set aside.
- In the same skillet, add onion and sauté until translucent, about 3 minutes. Add garlic and cook for another 30 seconds.
- Add ground turkey, breaking it apart with a spatula as it cooks. Season with paprika, cumin, thyme, salt, and pepper.
- Once the turkey is browned, add the potatoes back to the skillet. Stir to combine and pour in broth if desired. Simmer for 3–5 minutes to let the flavors meld.
- Garnish with fresh parsley or green onions and serve warm.
Notes
- This dish can be made on the stovetop in about 30 minutes from start to finish.
- For extra color and flavor, add chopped bell peppers or mushrooms with the onions.
- To reduce fat, use 93% lean ground turkey or turkey breast.
- Leftovers refrigerate well for up to 3 days; reheat on the stovetop or in the microwave.
- Swap in sweet potatoes for a sweeter twist.
