- 1½ lbs russet potatoes, diced
- 1 lb ground beef
- 2 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- ½ tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp chopped parsley or green onions (optional, for garnish)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced potatoes and cook 12–15 minutes, stirring occasionally, until golden and tender. Remove and set aside.
- In the same skillet, add remaining olive oil and ground beef. Cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Stir in onion and cook 2–3 minutes until softened. Add garlic and cook 30 seconds until fragrant.
- Season with paprika, thyme, salt, and black pepper.
- Return cooked potatoes to the skillet and stir to combine. Cook 5–7 minutes until everything is heated through and slightly crisp.
- Garnish if desired and serve warm.
