  • 1 cup corn (fresh, frozen, or canned)
  • ½ cup diced tomatoes
  • ½ cup chopped lettuce
  • ½ cup shredded cheddar or Monterey Jack cheese (optional)
  • 1 avocado or guacamole (optional)
  • ¼ cup sour cream or Greek yogurt (optional)
  • ¼ cup salsa or pico de gallo (optional)
  • Fresh cilantro and lime wedges (optional)

Instructions

  1. In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease.
  2. Stir in taco seasoning, tomato paste, and water. Simmer for 3–5 minutes until thickened and flavorful.
