- ½ cup water

- 1 cup black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- ½ cup diced tomatoes
- ½ cup chopped lettuce
- ½ cup shredded cheddar or Monterey Jack cheese (optional)
- 1 avocado or guacamole (optional)
- ¼ cup sour cream or Greek yogurt (optional)
- ¼ cup salsa or pico de gallo (optional)
- Fresh cilantro and lime wedges (optional)
Instructions
- In a skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease.
- Stir in taco seasoning, tomato paste, and water. Simmer for 3–5 minutes until thickened and flavorful.
- In serving bowls, add a layer of rice, black beans, and corn.
- Top with the seasoned beef, then add lettuce, tomatoes, and your favorite toppings.
- Garnish with cilantro and a squeeze of fresh lime. Serve immediately.
