  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 can (10.5 oz) gluten-free cream of mushroom soup
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1½ cups shredded cheddar cheese (divided)
  • 2 tbsp chopped parsley or green onions (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add onion and garlic and sauté for 2–3 minutes until softened and fragrant.
  4. In a bowl, whisk together cream of mushroom soup, milk, salt, black pepper, and paprika.
  5. Layer half of the sliced potatoes evenly in the baking dish. Top with the cooked beef mixture and sprinkle with 1 cup of shredded cheese.
  6. Add remaining potatoes and pour the soup mixture evenly over the top.
  7. Cover tightly with foil and bake for 40 minutes, or until potatoes are tender.
  8. Remove foil, sprinkle remaining cheese over the top, and bake uncovered for 15–20 minutes until melted and lightly golden.
  9. Let rest for 5 minutes, garnish if desired, and serve warm.

Notes

  • Make sure the cream of mushroom soup is gluten-free to keep this dish gluten-free.
  • You can use a leaner ground beef if preferred; drain well after browning.
