- 1 lb ground beef or chicken
- 1 tbsp olive oil
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup shredded cheddar or Mexican blend cheese
- ½ cup nacho cheese sauce (or melted Velveeta)
- 4 large flour tortillas
- ½ cup sour cream
- ½ cup shredded lettuce (optional)
- ½ cup diced tomatoes (optional)
- Butter, for grilling
Instructions
- Heat olive oil in a skillet over medium heat. Add ground beef or chicken and cook until browned. Stir in taco seasoning and a splash of water. Simmer for 2–3 minutes until saucy.
- Lay out the tortillas and layer each with cooked rice, seasoned meat, shredded cheese, and nacho cheese sauce. Add sour cream, lettuce, and tomatoes if desired.
- Roll each burrito tightly, tucking in the ends.
- Spread butter on one side of each burrito. Heat a skillet or griddle over medium heat. Place burrito butter-side down and sprinkle extra cheese on top. Grill until golden and cheese is melty, about 2–3 minutes per side.
- Slice in half and serve warm with extra sauce for dipping.
Notes
- For extra cheesiness, add another layer of shredded cheese inside the burrito before rolling.
- You can substitute chicken for beef if preferred.
- To make gluten-free, use gluten-free tortillas and ensure the cheese sauce is gluten-free.
