Description
Gingerbread Crinkle Cookies are chewy, spice-kissed treats with crackled tops, perfect for holiday baking and cookie swaps.

- 2 ¼ cups all-purpose flour
- 1 tsp baking soda
- 1 ½ tsp ground ginger
- 1 tsp cinnamon
- ¼ tsp cloves
- ¼ tsp nutmeg
- ¼ tsp salt
- ¾ cup brown sugar
- ⅓ cup unsulfured molasses
- ½ cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- ½ cup granulated sugar (for rolling)
- ½ cup powdered sugar (for coating)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
- In a large bowl, cream butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla, mixing until smooth.
- Gradually add dry ingredients to wet ingredients until a soft dough forms.
- Chill dough for at least 20 minutes to firm it up.
- Scoop 1 tablespoon of dough, roll into a ball, coat in granulated sugar, then roll generously in powdered sugar.
- Place on baking sheet about 2 inches apart and bake for 9–11 minutes, until cookies crack on top but remain soft inside.
- Cool for 5 minutes on the tray before transferring to a wire rack. Dust with extra powdered sugar if desired!
Notes
- Chill dough for at least 20 minutes to firm up for easier shaping.
- Cookies crack on top as they bake but stay soft in the centers.
- Dust with extra powdered sugar after cooling for a snowy finish.
- Allow cookies to cool on the tray for 5 minutes before transferring to a rack.
