Description

  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • 2 tbsp chopped parsley (optional, for garnish)
  • ½ cup shredded mozzarella cheese (topping)
  • 2 tbsp melted butter (topping)
  • ½ tsp garlic powder (topping)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, onion, garlic, eggs, milk, salt, black pepper, Italian seasoning, and paprika. Mix gently until just combined.
  3. Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
  4. Bake uncovered for 40 minutes.
  5. In a small bowl, mix melted butter with garlic powder.
  6. Remove meatloaf from oven, brush with garlic butter, and sprinkle mozzarella evenly over the top.
  7. Return to oven and bake for another 15–20 minutes, or until cooked through and cheese is melted.
  8. Let rest for 5–10 minutes before slicing. Garnish with parsley if desired and serve warm.
