Description
Garlic Parmesan Chicken and Potatoes is a quick, one-pan dinner featuring crispy roasted potatoes and juicy garlic parmesan chicken, seasoned with garlic, Italian herbs, and freshly grated Parmesan.

- 4 boneless, skinless chicken breasts or thighs
- 1½ lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ¾ cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (205°C) and line a large sheet pan with parchment paper.
- In a large bowl, toss potatoes with 2 tablespoons olive oil, half of the garlic, salt, and pepper. Spread on one side of the pan.
- In the same bowl, coat chicken with remaining olive oil, garlic, Italian seasoning, paprika, and half of the Parmesan.
- Place chicken on the other side of the sheet pan.
- Roast for 30–35 minutes, or until chicken reaches 165°F (74°C) and potatoes are tender and golden.
- Sprinkle remaining Parmesan over chicken and potatoes during the last 5 minutes of baking.
- Broil for 2–3 minutes for extra crispiness if desired.
- Garnish if desired and serve warm.
Notes
- For extra crispiness, broil for 2–3 minutes at the end.
- Leftovers refrigerate well for up to 3 days; reheat in the oven or microwave for best texture.
- Chicken thighs can be used instead of breasts for juicier results.
