Description

Garlic Parmesan Chicken and Potatoes is a quick, one-pan dinner featuring crispy roasted potatoes and juicy garlic parmesan chicken, seasoned with garlic, Italian herbs, and freshly grated Parmesan.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¾ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (205°C) and line a large sheet pan with parchment paper.
  2. In a large bowl, toss potatoes with 2 tablespoons olive oil, half of the garlic, salt, and pepper. Spread on one side of the pan.
  3. In the same bowl, coat chicken with remaining olive oil, garlic, Italian seasoning, paprika, and half of the Parmesan.
  4. Place chicken on the other side of the sheet pan.
  5. Roast for 30–35 minutes, or until chicken reaches 165°F (74°C) and potatoes are tender and golden.
  6. Sprinkle remaining Parmesan over chicken and potatoes during the last 5 minutes of baking.
  7. Broil for 2–3 minutes for extra crispiness if desired.
  8. Garnish if desired and serve warm.

Notes

  • For extra crispiness, broil for 2–3 minutes at the end.
  • Leftovers refrigerate well for up to 3 days; reheat in the oven or microwave for best texture.
  • Chicken thighs can be used instead of breasts for juicier results.
