Description

Garlic Lemon Chicken Quinoa is a fresh, wholesome Mediterranean-inspired main dish featuring juicy chicken seared with garlic and bright lemon, served over fluffy quinoa for a protein-packed, gluten-free dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp lemon zest
  • ¼ cup fresh lemon juice
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano
  • 1 cup uncooked quinoa, rinsed
  • 2 cups chicken broth
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and season with salt, black pepper, paprika, and oregano. Cook for 5–6 minutes until lightly golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, add garlic and cook for 30 seconds until fragrant.
  4. Stir in quinoa, chicken broth, lemon juice, and lemon zest.
  5. Bring to a simmer, cover, and cook for 15 minutes or until quinoa is tender and liquid is absorbed.
  6. Return chicken to the skillet and gently toss to combine.
  7. Cook uncovered for 2–3 minutes to warm through.
  8. Garnish with parsley if desired and serve warm.
