- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp lemon zest
- ¼ cup fresh lemon juice
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried oregano
- 1 cup uncooked quinoa, rinsed
- 2 cups chicken broth
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and season with salt, black pepper, paprika, and oregano. Cook for 5–6 minutes until lightly golden and cooked through. Remove chicken and set aside.
- In the same skillet, add garlic and cook for 30 seconds until fragrant.
- Stir in quinoa, chicken broth, lemon juice, and lemon zest.
- Bring to a simmer, cover, and cook for 15 minutes or until quinoa is tender and liquid is absorbed.
- Return chicken to the skillet and gently toss to combine.
- Cook uncovered for 2–3 minutes to warm through.
- Garnish with parsley if desired and serve warm.
