Description

  • For the Chipotle Dressing:
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp lime juice
  • 1 tsp chipotle powder (or chipotle in adobo, minced)
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine green and purple cabbage, bell pepper, corn, black beans, tomatoes, red onion, jalapeño, and cilantro.
  2. In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chipotle powder, garlic powder, smoked paprika, salt, and pepper until smooth and creamy.
  3. Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
