- ½ small red onion, finely chopped
- 1 jalapeño, seeded and finely diced (optional)
- 1 cup crushed Fritos corn chips (plus extra for topping)
- ¼ cup chopped cilantro
- For the Chipotle Dressing:
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tbsp lime juice
- 1 tsp chipotle powder (or chipotle in adobo, minced)
- ½ tsp garlic powder
- ¼ tsp smoked paprika
- Salt and pepper to taste
Instructions
- In a large bowl, combine green and purple cabbage, bell pepper, corn, black beans, tomatoes, red onion, jalapeño, and cilantro.
- In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chipotle powder, garlic powder, smoked paprika, salt, and pepper until smooth and creamy.
- Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
- Just before serving, mix in crushed Fritos to maintain their crunch.
- Garnish with extra Fritos and cilantro on top for a fun, crunchy finish.
- Serve immediately for best texture — perfect as a side dish or a light, flavorful main course.
