Description

Frito Cowboy Cabbage is a bold, crunchy Tex-Mex comfort dish featuring taco-seasoned ground beef, crisp cabbage, corn, black beans, tomatoes, melted cheese, crushed Fritos, and a creamy dressing.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 packet taco seasoning
  • 3 cups green cabbage, thinly sliced
  • 1 cup purple cabbage, thinly sliced
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • ½ cup black beans, rinsed and drained
  • 1½ cups crushed Fritos corn chips
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped cilantro or green onions
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tbsp lime juice
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  2. Stir in taco seasoning and cook for 1–2 minutes until well coated and fragrant. Remove from heat.
  3. In a large bowl, combine green cabbage, purple cabbage, corn, tomatoes, black beans, and half of the cheese.
  4. Add the warm taco-seasoned beef and toss gently to combine.
  5. In a small bowl, whisk together sour cream, mayonnaise, lime juice, garlic powder, smoked paprika, salt, and pepper until smooth.
  6. Drizzle dressing over the cabbage mixture and toss lightly.
  7. Just before serving, fold in crushed Fritos to keep them crunchy.
  8. Top with remaining cheese and chopped cilantro or green onions. Serve immediately.

Notes

  • Best served immediately for maximum crunch.
  • If making ahead, keep the dressing separate and assemble just before serving to prevent soggy chips.
  • Substitute red or purple cabbage with any preferred cabbage variety.
  • Adjust spice with jalapeño or hot sauce to taste.
