Instructions

  1. Caramelize the onions: In a large pot, heat butter and olive oil over medium-low heat. Add sliced onions, sugar, salt, and pepper. Cook 25–30 minutes, stirring often, until deeply golden and soft.
  2. Add garlic & herbs: Stir in garlic, thyme, and bay leaf. Cook 1 minute until fragrant.
  3. Add broth: Pour in the beef broth and Worcestershire sauce. Bring to a simmer.
  4. Cook the pasta: Add the pasta directly into the pot and cook uncovered for 12–15 minutes until tender.
  5. Make it creamy (optional): Stir in heavy cream for a richer soup-style pasta.
  6. Add cheese: Mix in Parmesan until melted.
  7. Serve: Ladle into bowls and top generously with Gruyere or mozzarella. Let melt or broil briefly for that classic French onion soup bubbly cheese top. Garnish with parsley.
