Description

  • 1 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet French onion soup mix
  • ½ tsp black pepper
  • 1½ cups shredded Swiss or mozzarella cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add sliced onion and cook for 6–8 minutes until softened and lightly caramelized. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in uncooked rice, beef broth, cream of mushroom soup, French onion soup mix, and black pepper until well combined.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Cover tightly with foil and bake for 40 minutes, or until the rice is tender.
  7. Remove foil, sprinkle cheese evenly over the top, and bake uncovered for 10–15 minutes until melted and bubbly.
  8. Let rest for 5 minutes, garnish if desired, and serve warm.

Notes

  • You can substitute Swiss with the cheese of your choice, such as cheddar, if desired.
  • For a gluten-free version, use a gluten-free cream of mushroom soup and gluten-free onion soup mix (note: many mixes contain gluten; check labels).
  • Leftovers refrigerate well and can be reheated in the microwave or oven.
