Description

French Onion Ground Beef Rice Casserole: a hearty, creamy one-dish dinner inspired by French onion soup, featuring seasoned ground beef, fluffy rice, caramelized onions, and melted cheese.

Ingredients

Scale
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet French onion soup mix
  • ½ tsp black pepper
  • 1½ cups shredded Swiss or mozzarella cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add sliced onion and cook for 6–8 minutes until softened and lightly caramelized. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in uncooked rice, beef broth, cream of mushroom soup, French onion soup mix, and black pepper until well combined.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Cover tightly with foil and bake for 40 minutes, or until the rice is tender.
  7. Remove foil, sprinkle cheese evenly over the top, and bake uncovered for 10–15 minutes until melted and bubbly.
  8. Let rest for 5 minutes, garnish if desired, and serve warm.

Notes

  • Optional parsley garnish adds fresh color and aroma.
  • Cheese options: Swiss or mozzarella work well; Gruyère can be a tasty alternative.
  • Leftovers refrigerate well for 3–4 days; reheat in oven or microwave.
