- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 packet French onion soup mix
- ½ tsp black pepper
- 1½ cups shredded Swiss or mozzarella cheese
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add sliced onion and cook for 6–8 minutes until softened and lightly caramelized. Add garlic and cook for 30 seconds until fragrant.
- Stir in uncooked rice, beef broth, cream of mushroom soup, French onion soup mix, and black pepper until well combined.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Cover tightly with foil and bake for 40 minutes, or until the rice is tender.
- Remove foil, sprinkle cheese evenly over the top, and bake uncovered for 10–15 minutes until melted and bubbly.
- Let rest for 5 minutes, garnish if desired, and serve warm.

- Optional parsley garnish adds fresh color and aroma.
- Cheese options: Swiss or mozzarella work well; Gruyère can be a tasty alternative.
