Description

French Onion Ground Beef and Rice Casserole: Rich, savory, and cozy, this comforting casserole combines caramelized onions, seasoned ground beef, and a creamy sauce with fluffy rice and melted cheese for a satisfying weeknight dinner.

Ingredients

Scale
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2½ cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp Worcestershire-style sauce
  • ½ tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper
  • 1½ cups shredded Swiss or mozzarella cheese
  • 2 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add sliced onions and cook 10–12 minutes, stirring occasionally, until soft and lightly caramelized. Add garlic and cook 30 seconds.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat if needed.
  4. Stir in rice, beef broth, cream of mushroom soup, Worcestershire-style sauce, thyme, salt, and black pepper. Mix well.
  5. Transfer mixture to the prepared baking dish and spread evenly.
  6. Cover tightly with foil and bake for 1 hour 15 minutes, or until rice is tender.
  7. Remove foil, sprinkle cheese over the top, and bake uncovered for 10–15 minutes until melted and bubbly.
  8. Let rest 10 minutes before serving. Garnish if desired.

Notes

  • For a lighter version, use part-skim mozzarella or Swiss cheese.
  • If you prefer, substitute cooked brown rice for the white rice for added fiber.
  • Leftovers refrigerate well for up to 3–4 days.
