- 1 lb ground beef
- 1 tbsp olive oil
- 2 medium onions, thinly sliced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 2½ cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 tsp Worcestershire-style sauce
- ½ tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- 1½ cups shredded Swiss or mozzarella cheese
- 2 tbsp chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add sliced onions and cook 10–12 minutes, stirring occasionally, until soft and lightly caramelized. Add garlic and cook 30 seconds.
- Add ground beef to the skillet and cook until browned. Drain excess fat if needed.
- Stir in rice, beef broth, cream of mushroom soup, Worcestershire-style sauce, thyme, salt, and black pepper. Mix well.
- Transfer mixture to the prepared baking dish and spread evenly.
- Cover tightly with foil and bake for 1 hour 15 minutes, or until rice is tender.
- Remove foil, sprinkle cheese over the top, and bake uncovered for 10–15 minutes until melted and bubbly.
- Let rest 10 minutes before serving. Garnish if desired.
Notes
- For a lighter version, use part-skim mozzarella or Swiss cheese.
- If you prefer, substitute cooked brown rice for the white rice for added fiber.
- Leftovers refrigerate well for up to 3–4 days.
