  • 15 oz chili beans or kidney beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 small onion, diced
  • 2 lb russet or yukon gold potatoes, thinly sliced
  • 5 oz tomatoes with green chiles, diced
  • 1/2 tsp black pepper
  • 1 oz chili seasoning
  • 1 tsp smoked paprika
  • 2 cups shredded cheese (cheddar or your choice)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish with butter or oil.
  2. Cook smoked beef in a skillet over medium heat until browned.
  3. Add diced onion and minced garlic; cook until onion is translucent.
  4. Stir in chili beans, tomatoes with green chiles, garlic powder, chili seasoning, smoked paprika, and black pepper; simmer 5 minutes.
  5. Layer half of the sliced potatoes in the dish, top with half of the beef mixture, then sprinkle with cheese. Repeat layers.
  6. Cover with foil and bake 30 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
