Chicken Parmesan: A lighter, baked version of the classic, crispy, cheesy weeknight favorite.

- 4 boneless, skinless chicken breasts
- ½ cup whole wheat breadcrumbs (or panko)
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 large egg
- 1 cup marinara sauce (no-sugar-added or homemade)
- ½ cup shredded part-skim mozzarella cheese
- Fresh basil, for garnish
- Olive oil spray
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with olive oil.
- Pound chicken breasts to even thickness for quicker, even cooking.
- In a shallow bowl, mix breadcrumbs, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
- In another bowl, whisk the egg. Dip each chicken breast into the egg, then coat in the breadcrumb mixture.
- Place coated chicken on the prepared baking sheet and lightly spray tops with olive oil.
- Bake for 20–25 minutes, or until golden and cooked through.
- Remove from oven, spoon marinara sauce over each piece, and top with mozzarella cheese.
- Return to oven for 5–7 minutes, or until cheese is melted and bubbly.
- Garnish with fresh basil and serve with whole wheat pasta, zucchini noodles, or a side salad.
Notes
- For extra-crispiness, broil for 1–2 minutes after cheese melts.
- Use gluten-free breadcrumbs to make this recipe gluten-free.
- Pair with whole wheat pasta or zucchini noodles for a balanced meal.
- Store leftovers in an airtight container for up to 3 days.
