Description

Chicken Parmesan: A lighter, baked version of the classic, crispy, cheesy weeknight favorite.


Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ cup whole wheat breadcrumbs (or panko)
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 large egg
  • 1 cup marinara sauce (no-sugar-added or homemade)
  • ½ cup shredded part-skim mozzarella cheese
  • Fresh basil, for garnish
  • Olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly spray with olive oil.
  2. Pound chicken breasts to even thickness for quicker, even cooking.
  3. In a shallow bowl, mix breadcrumbs, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
  4. In another bowl, whisk the egg. Dip each chicken breast into the egg, then coat in the breadcrumb mixture.
  5. Place coated chicken on the prepared baking sheet and lightly spray tops with olive oil.
  6. Bake for 20–25 minutes, or until golden and cooked through.
  7. Remove from oven, spoon marinara sauce over each piece, and top with mozzarella cheese.
  8. Return to oven for 5–7 minutes, or until cheese is melted and bubbly.
  9. Garnish with fresh basil and serve with whole wheat pasta, zucchini noodles, or a side salad.
