Description

Dumpling Bake is a cozy, one-pan weeknight dinner where frozen dumplings bake in a creamy red curry coconut broth for a comforting, effortless meal.


Ingredients

  • 1 bag (20–24 oz) frozen vegetarian dumplings
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 2 tbsp red curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup vegetable broth
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 red bell pepper, sliced
  • 1 cup baby spinach
  • 2 tbsp chopped green onions (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a 9×13-inch baking dish, whisk together olive oil, garlic, ginger, red curry paste, coconut milk, vegetable broth, soy sauce, and brown sugar until smooth.
  3. Stir in sliced bell pepper.
  4. Arrange frozen dumplings evenly in the sauce, lightly pressing them down so they are partially submerged.
  5. Cover with foil and bake for 25 minutes.
  6. Remove foil, stir gently, and add spinach.
  7. Bake uncovered for 5-7 more minutes until dumplings are tender and sauce is slightly thickened.
  8. Garnish if desired and serve warm.

Notes

  • You can use any variety of frozen dumplings (vegetarian, chicken, or pork) if you prefer a different filling.
  • For gluten-free prep, use gluten-free soy sauce and gluten-free dumplings.
  • Leftovers refrigerate well for up to 3 days.
  • Spinach can be swapped with kale or bok choy for variety.
