- 1 cup uncooked long-grain white rice
- 2 1/2 cups chicken broth
- 1 cup tzatziki sauce
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup crumbled feta cheese (optional)
- 2 tbsp chopped fresh parsley or dill (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Spread uncooked rice evenly in the bottom of the baking dish.
- Pour chicken broth over the rice and stir gently to distribute evenly.
- Stir in olive oil, garlic, oregano, paprika, salt, and black pepper.
- Place chicken on top of the rice in a single layer.
- Spread tzatziki sauce evenly over the chicken and lightly over the rice.
- Cover tightly with foil and bake for 55–60 minutes, or until rice is tender and chicken is cooked through.
- Remove foil, sprinkle feta cheese over the top if using, and bake uncovered for 5–10 minutes.
- Let rest for 5 minutes. Garnish if desired and serve warm.
