- 1 lb ground chicken
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 8 small flour tortillas
- 1 1/2 cups shredded mozzarella or cheddar cheese
- 1/2 cup chopped dill pickles
- 1/2 cup ranch dressing
- 1 cup shredded lettuce (optional)
- 2 tbsp chopped fresh dill or parsley (optional, for garnish)
Instructions
- In a bowl, mix ground chicken with garlic powder, onion powder, paprika, salt, and black pepper.
- Divide chicken into 8 portions and press each portion evenly onto one side of a tortilla.
- Heat a large nonstick skillet over medium-high heat.
- Place tortillas chicken-side down and cook for 3–4 minutes until the chicken is cooked through and crispy.
- Flip tortillas, sprinkle cheese directly onto the skillet around the tortilla edges to create a crispy cheese lace, and cook for 1–2 minutes until cheese is golden and tortillas are lightly crisp.
- Remove from heat and top tacos with chopped dill pickles, shredded lettuce, and a drizzle of ranch dressing.
- Garnish with fresh herbs if desired. Fold and serve immediately.
Notes
- For extra crispiness, press the cheese lace close to the tortilla edge and cook a little longer, watching carefully to avoid burning.
- To make this gluten-free, substitute corn tortillas, though the texture will be different.
- Use reduced-fat ranch for a lighter option.
