Ingredients

  • 1 lb ground chicken
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 small flour tortillas
  • 1 1/2 cups shredded mozzarella or cheddar cheese
  • 1/2 cup chopped dill pickles
  • 1/2 cup ranch dressing
  • 1 cup shredded lettuce (optional)
  • 2 tbsp chopped fresh dill or parsley (optional, for garnish)

Instructions

  1. In a bowl, mix ground chicken with garlic powder, onion powder, paprika, salt, and black pepper.
  2. Divide chicken into 8 portions and press each portion evenly onto one side of a tortilla.
  3. Heat a large nonstick skillet over medium-high heat.
  4. Place tortillas chicken-side down and cook for 3–4 minutes until the chicken is cooked through and crispy.
  5. Flip tortillas, sprinkle cheese directly onto the skillet around the tortilla edges to create a crispy cheese lace, and cook for 1–2 minutes until cheese is golden and tortillas are lightly crisp.
  6. Remove from heat and top tacos with chopped dill pickles, shredded lettuce, and a drizzle of ranch dressing.
  7. Garnish with fresh herbs if desired. Fold and serve immediately.

Notes

  • For extra crispiness, press the cheese lace close to the tortilla edge and cook a little longer, watching carefully to avoid burning.
  • To make this gluten-free, substitute corn tortillas, though the texture will be different.
