  • ½ cup almond butter (or peanut butter)
  • ⅓ cup honey or maple syrup
  • 2 ripe bananas, mashed
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, mix mashed bananas, almond butter, honey (or maple syrup), and vanilla until smooth.
  3. Stir in oats, cinnamon, baking powder, and salt until combined. Fold in half of the chocolate chips.
  4. Divide mixture evenly into muffin cups, pressing down gently to compact.
  5. Sprinkle remaining chocolate chips on top.
  6. Bake 20–25 minutes, until set and golden at the edges.
  7. Let cool completely before removing from tin. Store in the fridge for up to 5 days.
