Crumbl Pecan Pie Cookies: Soft, buttery sugar cookies topped with gooey pecan pie filling—mini pecan pies in every bite.

- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- 1 cup chopped pecans
- ½ cup brown sugar
- 3 tbsp unsalted butter
- 3 tbsp maple syrup or corn syrup
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and sugar until light and fluffy. Add egg and vanilla, mixing until smooth.
- Stir in flour, baking powder, and salt to form dough.
- Scoop dough into 9 large balls and place on the baking sheet. Flatten slightly and make a shallow well in the center.
- In a small saucepan, combine brown sugar, butter, maple syrup, vanilla, and salt. Heat until melted and glossy. Stir in pecans.
- Spoon pecan mixture into the wells of each cookie.
- Bake 12–14 minutes, until edges are golden. Cool before serving.
Notes
- Yields 9 large cookies.
- Store leftovers in an airtight container for up to 3 days.
- For extra flavor, toast the pecans before chopping.
- Soft centers will set as cookies cool; do not overbake.
- These cookies taste like mini pecan pies in bite-sized form.
