Description

Crumbl Iced Oatmeal Cookies — soft, thick oatmeal cookies with a cozy cinnamon flavor and a crackly vanilla glaze, inspired by Crumbl’s iconic treat.


Ingredients

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • For the Vanilla Glaze:
  • 1 cup powdered sugar
  • 12 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Pulse oats a few times in a food processor to slightly break them down (for that signature Crumbl texture).
  3. In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  4. In another large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  5. Beat in the egg and vanilla until smooth.
  6. Gradually mix in the dry ingredients until combined.
  7. Scoop large cookie dough balls (about 3 tbsp each) and place them 2 inches apart on the baking sheet.
  8. Bake for 10–12 minutes, until the edges are set but the centers remain soft. Cool completely.
  9. For the glaze, whisk powdered sugar, milk, and vanilla until smooth and slightly thick.
  10. Dip the tops of the cooled cookies into the glaze, then let them set for about 20 minutes before serving.

Notes

  • To mimic Crumbl texture, pulse oats briefly in a processor.
  • Do not overbake; cookies should stay soft in the center.
  • If you want thicker cookies, chill the dough for 30 minutes before baking.
  • The glaze hardens into a crackly finish as it sets.
