Crumbl Iced Oatmeal Cookies — soft, thick oatmeal cookies with a cozy cinnamon flavor and a crackly vanilla glaze, inspired by Crumbl’s iconic treat.

- 1 cup old-fashioned oats
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- For the Vanilla Glaze:
- 1 cup powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Pulse oats a few times in a food processor to slightly break them down (for that signature Crumbl texture).
- In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
- In another large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla until smooth.
- Gradually mix in the dry ingredients until combined.
- Scoop large cookie dough balls (about 3 tbsp each) and place them 2 inches apart on the baking sheet.
- Bake for 10–12 minutes, until the edges are set but the centers remain soft. Cool completely.
- For the glaze, whisk powdered sugar, milk, and vanilla until smooth and slightly thick.
- Dip the tops of the cooled cookies into the glaze, then let them set for about 20 minutes before serving.
Notes
- To mimic Crumbl texture, pulse oats briefly in a processor.
- Do not overbake; cookies should stay soft in the center.
- If you want thicker cookies, chill the dough for 30 minutes before baking.
- The glaze hardens into a crackly finish as it sets.
